Preparation: The following process is recommended for optimal results: Allow the sugar paste to reach room temperature. Knead the sugar paste firmly until it is soft and elastic. Dust the work surface with a little powdered sugar and roll out the fondant with a rolling pin until you achieve an even shape (2-3 mm thick). Rotate the sugar paste a quarter turn to prevent sticking. Are small cracks still appearing at the edges when rolling out the fondant? Knead again firmly until the edges are smooth when rolled out. Then the sugar paste is ready to be used.
